Weather & Bunny Names

The high for today in Minnesota was 60°F! For us Minnesotans, that means short-sleeve weather. I thought it was kind-of funny how several people (including myself) in church this morning were wearing t-shirts in light of the warm weather!
   Most of our snow has melted. I was actually away most of the day and when I came home this evening, I couldn't believe how much snow was gone! Amazing what a single sixty-degree day can do! Tomorrow is forecasted at a high of 59°F and a thunder storm! A thunder storm? It's been so long since I last heard thunder and saw lightning! Then Tuesday, we're supposed to get more snow. Certainly odd weather, but that's Minnesota for you.
   To the subject of my bunnies' names… I named the black one Rohan and the gray one Rosie (both LOTR's names). Rohan is a kingdom of men located between the Misty Mountains and the White Mountains in J.R.R. Tolkien's the Lord of the Rings. Rosie was the name of Sam Gamgee's wife as well …


Need to use up some extra basil? Here's my mom's yummy pesto recipe:


Ingredients: 1/4 cup extra virgin olive oil3 cloves peeled garlic3 cups fresh, washed basil leaves1-2 cups cashews or pine nuts
Instructions: Pulverize olive oil and garlic in blender. Turn blender to lowest speed, add basil until everything is mixed well, but not pureed!Add cashews/pine nuts (blender on low to medium speed).If mixture is too stiff, add some more olive oil until it gets moving again.Serve over pasta with parmesan cheese and salt to taste.
Listening to bluegrass hymns and enjoying the beautiful, sunny day as I write this... I love bluegrass gospel music and am thankful that God has provided us with such a gorgeous afternoon :)!

Zucchini "Pasta"

Here's a healthy/GF alternative to regular pasta: zucchini noodles! We used the Paderno World Cuisine Tri-Blade Plastic Spiral Vegetable Slicer to turn this fruit (yes, zucchini's a fruit~ it has seeds in it!) into "pasta".

   Simply serve warm (boil water, add zucchini for about 5 minutes and drain) or cold topped with your favorite pasta sauce. Note: the dish will need to be salted!

Bunny Pictures III

Pictures of the bunnies… They are 5 weeks old now. They've grown so fast! I'm thinking the gray one is a girl and the black one is a boy. But I could be wrong! Last year I thought a certain bunny was a boy, so I gave it away to some friends. It turned out that the bunny was a girl!    I'm still playing around with names for these two. It will be either Rosie or Ava for the girl and a Lord of the Rings/Hobbit name for the boy. Any suggestions??    I apologize for the blurry pictures~ I am currently saving up for a better camera. My previous Nikon camera (not a fancy one) broke about a year ago and all I have now is 3 megapixel one or my phone. Sometimes Benjamin kindly lets me use his camera, which takes much better pictures!

Bros on the Roof

Today while playing outside in the sunshine, my two youngest brothers decided that it would be fun to climb on top of the garage roof! This isn't the first time they've done so… :)

It's good to see the boys enjoying the themselves outside and each other's company :)!

Beautiful Day, Beautiful One

What a gorgeous day it is! It's slightly warmer outside, the sun's shining bright in a blue sky with wispy clouds, more snow is melting, some birds have returned from the south and are filling the air with their songs. It is so refreshing to step outside today. Thinking about all this I realize that Jesus is even more beautiful and refreshing than anything we could ever imagine! That thought reminds me of a song called "Beautiful One" by Jeremy Camp:

Spring is in the air! You can smell it. You can see it. You can hear it. You can feel it! The snow is melting rapidly and in some places leaving patches of green grass. Underneath all this snow and ice there are plants ready to pop out and blossom! It's amazing after the winter we just experienced here in Minnesota. 

   Yesterday we went skiing/snowboarding at Hyland Hills. There were actually some people who wore shorts and/or t-shirts out on the slopes! It was a day where all the snow gear you had to wear was a light jacket or sweatshirt. We didn't really need to use a hat or gloves (with the exception of gloves for the towrope). About mid-afternoon it got pretty hot outside. It kind-of seemed strange to be snowboarding when it was so warm outdoors! The snow was quite slushy. This morning some of us kids woke up with sunburns on our faces. The thought never crossed my mind that we should've brought sunscreen with (in March)! Spending the whole day out on the ski slopes…
